Ingredients
- 🍴1/2 cup semolina
- 🍴1 1/2 cup watermelon juice
- 🍴raisins as required
- 🍴3/4 cup jaggery
- 🍴cashews as required
- 🍴2 tablespoon ghee
Instructions
- 🍴Dry roast sooji or rava till it slightly changes colour and releases a nice aroma.
- 🍴Heat ghee in a pan over medium flame and roast cashews till they turn golden brown in colour, keep aside. Also, roast raisins till they puff up and keep aside.
- 🍴In the same pan, add the watermelon juice and bring it to a boil. Meanwhile, melt jaggery in another pan and strain to remove impurities.
- 🍴Once the watermelon juice comes to a boil, add the roasted Rava in a slow stream and keep mixing so that it does not form lumps.
- 🍴Once the rava has absorbed all the liquid, add the melted jaggery and mix well. Add the roasted cashews and raisins finally.
- 🍴Notes: No colour needs to be added since the jaggery and watermelon gives the dessert a perfect colour. Make sure, you do not add too much jaggery in the watermelon Kesari, add it as per your taste as the watermelon juice might make it sweeter.
