Ingredients
- 🍴1 kilograms watermelon
- 🍴salt as required
- 🍴1 1/2 cup pomegranate juice
- 🍴3 tablespoon tamarind paste
- 🍴5 stalks spring onions
- 🍴4 medium cucumber
- 🍴1 teaspoon powdered black pepper
- 🍴10 mint leaves
Instructions
- 🍴Wash and clean the watermelon and cucumber. Next, peel the watermelon and chop it into small cubes. Then dice the cucumber into small cubes. Keep them aside until needed again.
- 🍴Now transfer the chopped cucumber and watermelon in a mixing bowl. Sprinkle black pepper and salt on them and mix well. Cover the mixture with a lid. Meanwhile, in a non stick pan add pomegranate juice followed by adding tamarind paste. Allow the mixture to simmer on medium flame.
- 🍴Once the mixture has gained the desired consistency remove it from flame. Top the mixture with black pepper and salt. Then allow the mixture to rest until it cools down.
- 🍴Now carefully arrange spring onions on a clean plate and transfer the cucumber and watermelon mixture on it. After that add the prepared pomegranate dressing to the said mixture. Garnish it with some mint leaves and serve fresh!
