Ingredients

  • 🍴1 red onion
  • 🍴1 lime
  • 🍴400 gm chickpeas
  • 🍴1 tablespoon ground cumin seeds
  • 🍴1 bunch coriander leaves
  • 🍴2 handfuls of baby lettuce
  • 🍴4 tablespoon hummus
  • 🍴6 radish
  • 🍴50 ml rice vinegar
  • 🍴1 clove garlic
  • 🍴80 gm toasted walnuts
  • 🍴2 tablespoon virgin olive oil
  • 🍴500 gm boiled quinoa
  • 🍴1 piece toasted pita bread

Instructions

  • 🍴First, you need to prepare the radish and onion pickle and for the same, wash and peel them both. Next, finely slice the red onion and slice the radishes thinly in a small bowl.
  • 🍴Add the lime zest to the bowl along with rice vinegar. Put aside whilst you prepare the falafel.
  • 🍴Put the chickpeas, garlic, cumin, walnuts, and coriander into a food processor and blitz until the mixture comes together.
  • 🍴Roll into 8 walnut-sized balls and flatten each ball slightly. Add the olive oil to a non-stick frying pan over a medium flame and fry on both sides until they turn golden brown.
  • 🍴Split the quantity of quinoa between two large bowls and drizzle each with olive oil and stir properly.
  • 🍴Top up each bowl with the falafel, hummus, pickled radish and baby lettuce leaves. Chop the walnuts and coriander leaves. Sprinkle each bowl with the reserved walnuts and remaining coriander leaves, and serve with warm pita bread.
