Ingredients
- 🍴5 boiled potato
- 🍴1/4 cup finely chopped capsicum ( green pepper)
- 🍴2 finely chopped onion
- 🍴1/2 inch grated ginger
- 🍴3/4 teaspoon red chili powder
- 🍴1 pinch salt
- 🍴1 handful chopped coriander leaves
- 🍴2 tablespoon bread crumbs
- 🍴1/4 cup refined oil
- 🍴1/4 cup finely chopped black beans
- 🍴1 small finely chopped carrot
- 🍴1/4 cup boiled peas
- 🍴3/4 teaspoon coriander powder
- 🍴1/4 teaspoon dry mango powder
- 🍴1/2 teaspoon garam masala powder
- 🍴2 tablespoon corn flour
- 🍴1 handful cornflakes
Instructions
- 🍴Grate the boiled potatoes in a large bowl and mix together with all finely chopped veggies (French beans, capsicum, carrot, and onion). Now, add boiled and mashed green peas and all the spices (coriander powder, garam masala powder, mango powder, red chili powder, chopped ginger and cornflour). Mix all the ingredients until well combined.
- 🍴Lastly, add salt to taste, bread crumbs (optional), mix it well again until all the spices get well combined. If the mixture is sticky, add more bread crumbs accordingly. Take a generous portion of the mixture and make small balls out of it by rolling between your hands.
- 🍴Prepare the rest of the balls in the same way. Grease your palms to avoid sticking. Take cornflakes on a plate and slightly crush them with your hands.
- 🍴Take each ball one by one and coat it with crushed cornflakes completely. Heat oil in a deep pan on high flame and once the oil becomes hot, drop Veg Kurkure Balls slowly into it, taking care not to overcrowd them. Fry the balls in batches.
- 🍴Fry the Veg Kurkure Balls until they are golden brown, turning occasionally. This would take about 4-5 minutes. Once Kurkure Balls are almost fried, keep the flame on high and fry them for a minute. Take them out on a paper towel or absorbent paper.
- 🍴Insert toothpick or lollipop stick into each fried ball to make Veg Kurkure Lollipops. Serve hot with green chutney or tomato ketchup.
