Ingredients
- 🍴250 gm cherry tomatoes
- 🍴6 tablespoon minced basil
- 🍴salt as required
- 🍴1 teaspoon black pepper
- 🍴4 tablespoon virgin olive oil
- 🍴2 tablespoon dijon mustard
- 🍴1/2 cup balsamic vinegar
- 🍴2 tablespoon minced cilantro
- 🍴2 halved, thinly sliced red onion
- 🍴2 cup corn
- 🍴6 cloves peeled, thinly sliced garlic
- 🍴1/2 cup chopped green onion
Instructions
- 🍴To begin with, wash cherry tomatoes in running water and add them to a bowl along with vinegar, black pepper powder, cilantro, basil, chopped red and green onion, and salt as per your taste. Mix well all the ingredients and keep them aside.
- 🍴Put a pan on medium flame and add oil to it. Once the oil is hot enough, add the corns in it and saute for about 5 minutes or until they are tender. Then, add garlic along with Dijon mustard in the pan, and stir well. (Note: You can use boiled sweet corn and saute for 2 minutes just to cook the spices.)
- 🍴Once done, transfer it to a serving dish along with the prepared vegetable mixture and mix well. Put the dish in a refrigerator for about 10-15 minutes. You can choose to garnish it with arugula or just celery. Serve chilled.
