Ingredients

  • 🍴10 cup watermelon
  • 🍴1/2 cup flaked almonds
  • 🍴6 slices white bread
  • 🍴1 teaspoon cumin powder
  • 🍴8 medium tomato
  • 🍴4 tablespoon virgin olive oil
  • 🍴1 teaspoon paprika
  • 🍴4 tablespoon red wine vinegar
  • 🍴2 cloves garlic

Instructions

  • 🍴To start with, take a chopping board and chop the watermelon into cube size pieces. Also, mince garlic cloves. Take a large bowl and place bread in it. Cover the bread with required water and keep aside for 4-5 minutes. Squeeze the water from the bread and transfer to a food processor.
  • 🍴With the help of a knife, cut a small shallow X in the bottom of tomatoes. In a deep bottomed pan, boil water on medium flame. Now add the tomatoes in the boiling water. Wait for 30 seconds and remove from water. Let tomatoes cool down. Once cooled, peel and chop tomatoes.
  • 🍴Transfer the tomatoes to the food processor along with vinegar, cumin seeds, almonds, paprika oil and garlic cloves. Process until you obtain a smooth puree. Put in watermelon cubes, and process again until a smooth mixture in obtained. Strain soup through a strainer.
  • 🍴Serve hot. Garnish with coriander leaves if desired.
