Ingredients

  • 🍴250 gm all-purpose flour
  • 🍴salt as required
  • 🍴200 gm grated carrot
  • 🍴200 ml milk
  • 🍴5 gm powdered green cardamom
  • 🍴200 gm whole wheat flour
  • 🍴35 ml ghee
  • 🍴200 gm sugar
  • 🍴20 ml condensed milk
  • 🍴2 gm saffron

Instructions

  • 🍴Knead a smooth dough

To prepare this mouth-watering delicacy, take a small bowl and add a few strands of saffron along with 3 tbsps of milk in it. Keep it aside for a couple of minutes. Next, take a mixing bowl and add the flour along with salt and 20ml ghee. Add 1 tbsp of the saffron milk and knead it into a dough. Cover the bowl with a moist cloth and keep aside for 30-40 minutes.

  • 🍴Cook the carrot halwa

Now, take a pan over medium flame and heat ghee in it. When the ghee is hot enough, add grated carrots and cook till the raw smell goes away. Add the remaining saffron milk and the remaining milk, allow it to simmer, then, lower the flame and cover with a lid. Cook till the carrot is tender.

  • 🍴Add sugar and condensed milk

Add the sugar and condensed milk to the pan and cook until the mixture starts to thicken. Sprinkle the cardamom and cook till the mixture starts leaving the sides of the pan. Transfer it to a bowl and allow it to cool down.

  • 🍴Extract the dough

Next, take the dough and divide it into 8 pieces. Spread the dough into discs and place the filling in the center. Pull the dough over the filling to seal it completely. Roll it into a ball and flatten it with your palm. Then, place it on lightly greased banana leaves or plastic wrap and use a rolling pin to roll them out.

  • 🍴Heat a Tawa

Take a tawa over medium heat and place the polis on them. Cook until light brown spots form on both sides, this takes about 2 minutes per side. Keep the polis warm while repeating the process for the rest of the dough & filling of carrot halwa.
