Ingredients
- 🍴3 cup basil
- 🍴2 tablespoon toasted pine nuts

- 🍴200 gm parboiled pasta penne
- 🍴1 handful lettuce loose-leaf
- 🍴1 cup grated parmesan cheese
- 🍴3 tablespoon orange juice
- 🍴1 tablespoon lemon juice
- 🍴3 pinches salt
- 🍴1 piece Orange peel
- 🍴1 tablespoon melon seeds
Instructions
- 🍴Combine all orange pesto ingredients including fresh basil, parmesan cheese, toasted pine nuts, orange juice, olive oil, fresh lemon juice and garlic in a processor. Blend until they become a coarse paste, scraping downsides of the bowl occasionally. Season the pesto with salt.
- 🍴Next, in a large bowl, toss together the boiled cold penne pasta, torn lettuce leaves, orange segments, melon seeds and orange pesto dressing.
