Ingredients
- π΄2 onion
- π΄2 tablespoon corn
- π΄1 1/2 cup boiled black beans
- π΄1/4 cup cilantro
- π΄1 tablespoon lemon juice
- π΄1 tablespoon vegetable oil
- π΄1/2 cup coriander leaves
- π΄salt as required
- π΄1 cup boiled rice
- π΄10 cloves garlic
- π΄1 tablespoon green onion
- π΄1 chopped jalapeno
- π΄1/2 teaspoon cumin powder
- π΄2 tablespoon water
- π΄1 medium tomato
- π΄1 chopped avocados
- π΄juice of 1 lemon as required
- π΄1 teaspoon chili flakes
Instructions
- π΄Make black bean dip
Heat 1 tbsp oil in a pan, saute 1 chopped onion, 4 garlic cloves, and jalapeno till soft. Now add boiled black beans, onion, garlic cloves, jalapeno pepper, cilantro, ground cumin, and 2-3 tbsp water in a blender. Blend to form a coarse paste. Lastly, add 1 tablespoon lemon juice and mix. Take the dip out in a bowl.
- π΄Make Guacamole dip
First put 1 chopped onion, 4 garlic cloves, coriander in the mortar, and pound it with the pestle till you get a paste. Now add avocado, rock salt, and again pound it for a short duration till you get your guacamole consistency. Add the juice of one lemon and cut tomatoes in the end.
- π΄Prepare the rice
SautΓ© some cooked white rice with 2 cloves of chopped garlic, 2 tablespoon corn, 1 tsp chili flakes, salt as per taste and sprinkle some green onions as garnish.
- π΄Arrange and serve
Arrange everything on a plate by first adding the black bean dip, then rice, and then guacamole dip. Serve the beautiful Mexican platter and enjoy.
