Ingredients
- 🍴2 1/4 cup all-purpose flour
- 🍴1 1/4 tablespoon apple cider vinegar

- 🍴4 1/2 large ripe mangoes
- 🍴1 1/4 teaspoon ginger powder
- 🍴1/2 teaspoon salt
- 🍴2/3 cup raisins
- 🍴2/3 cup sunflower oil
- 🍴1 1/4 teaspoon baking soda
Instructions
- 🍴Prepare the cake batter and preheat the oven
Preheat the oven to 325° Fahrenheit. Blend 1 1/2 chopped mangoes in a blender. Grease 9-inch cake pan. In a large bowl, whisk the flour with cinnamon, ginger, baking soda, mango puree and salt, vinegar, and oil. Then add the golden raisins.

Scrape the batter into the prepared pan and smoothen the top with a spatula. Bake for 30 minutes until the toothpick inserted in the center of the cake comes out clean.
