Ingredients
- π΄4 medium mango
- π΄1 teaspoon cumin
- π΄1/4 teaspoon asafoetida
- π΄1/4 teaspoon turmeric
- π΄1 teaspoon dry mango powder
- π΄1 cup Coconut milk
- π΄10 curry leaves
- π΄2 tablespoon ghee
- π΄1/2 teaspoon mustard seeds
- π΄2 teaspoon coriander powder
- π΄1 teaspoon Red chili powder
- π΄1 1/2 cup Water
- π΄1 tablespoon juice of 1 lemon
- π΄1 1/2 teaspoon salt
Instructions
- π΄Scoop the mangoes out and blend them to get the pulp. Retain the pips and keep them aside.
- π΄Now heat ghee in a pan, splutter cumin and mustard seeds for a few seconds when the ghee is hot.
- π΄Now, add the coriander powder, amchoor powder, turmeric powder, red chili, salt and stir-fry for a minute. Sprinkle some water to avoid the spice from sticking to the base and getting burnt. Now add the mango pips. Let them coat with the spices.
- π΄After two minutes, pour over the mango pulp and stir for 5 minutes.
- π΄Finally, add water and cook till it thickens a little. Then add coconut milk. Let this simmer for 5 minutes.
- π΄Now take it off the heat, add lemon juice and finish it off by adding a tempering tadka of asafoetida (hing) and curry leaves. Serve with rice or any bread you love eating.
