Ingredients
- 🍴250 gm chopped into cubes, boiled bottle gourd
- 🍴4 tablespoon Refined oil
- 🍴1 red chili
- 🍴2 teaspoon coriander powder
- 🍴1/4 teaspoon Red chili powder
- 🍴1 cup washed & dried peas
- 🍴1 teaspoon cumin seeds
- 🍴1 teaspoon salt
- 🍴1/4 teaspoon powdered turmeric
- 🍴9 cup Water
For Garnishing
- 🍴4 sprigs chopped Mint Leaves
For The Main Dish
- 🍴2 teaspoon garlic paste
- 🍴2 finely chopped onion
- 🍴4 tablespoon tomato puree
- 🍴1/2 teaspoon ginger paste
- 🍴1 1/2 finely chopped tomato
For Toppings
- 🍴1 teaspoon fennel seeds
- 🍴1/4 teaspoon thymol seeds
Instructions
- 🍴Boil gourd in 8 cups water with 1 and a half teaspoon salt for 10 minutes till soft. Strain the bottle gourd and refresh in cold water.
- 🍴Put a kadhai over medium flame and heat 2 tablespoon oil in it. When it's hot, add 1 teaspoon cumin seeds in it, stir till it turns golden, and add 1 tablespoon garlic paste along with half a teaspoon ginger paste. Saute for a minute.
- 🍴Add boiled gourd in the kadhai, and saute for 2-3 minutes. Add peas in it, stir fry for 2 minutes on high heat and remove from flame.
- 🍴Now prepare the masala for the main dish. In a frying pan, heat 1 tablespoon oil and add 1 broken red chili in it. Wait for a minute till it starts to darken. Add chopped onions and cook them till they turn light brown.
- 🍴Then add salt, coriander powder, turmeric powder, red chili powder and 1 teaspoon garlic paste. Cook this masala for about 2 minutes or till onions turn brown.
- 🍴Now add chopped tomatoes in the kadhai and stir well, then add tomato puree in it. Cook on low heat for about 5-7 minutes.
- 🍴Mix this masala with the vegetables and mix well.
- 🍴Grind together the fennel seeds, green cardamom and thymol seeds. Sprinkle this fresh masala over the prepared dish and toss lightly.
- 🍴Serve it hot with chapati, paratha or naan.
