- 🍴6 curry leaves
- 🍴1 teaspoon black mustard seeds

- 🍴1/2 teaspoon turmeric
- 🍴1 teaspoon dry mango powder
- 🍴1 tablespoon jaggery
- 🍴2 tablespoon vegetable oil
- 🍴1 teaspoon cumin seeds
- 🍴2 green chili
- 🍴1 teaspoon grated ginger
- 🍴1 tablespoon coriander powder
- 🍴1/2 teaspoon red chili powder
- 🍴1 teaspoon tamarind paste

Instructions
- 🍴Deseed the bitter gourds and chop them
To make this amazing karela recipe, wash the bitter gourds thoroughly under running water and pat dry them. Then, with the help of a knife, slit the bitter gourds vertically from the center and deseed them. Chop the bitter gourds and keep them aside.
- 🍴Prepare the tempering
Heat oil in a frying pan and when the oil is hot enough, add cumin seeds, mustard seeds, green chilies, and curry leaves in it. Saute for a few seconds and then add chopped onions and saute the mixture for a minute. Stir in ginger and garlic followed by coriander, red chili powder, turmeric, and raw mango powder. Drizzle some drops of water and stir well.
