Ingredients

  • 🍴1 1/2 cup jackfruit
  • 🍴1/2 medium yellow bell pepper
  • 🍴2 teaspoon garlic
  • 🍴1/2 teaspoon coriander powder
  • 🍴1/4 cup orange juice
  • 🍴1 tablespoon adobo sauce
  • 🍴2 tablespoon diced mango
  • 🍴3 tablespoon canola oil/ rapeseed oil
  • 🍴1 tablespoon jalapeno
  • 🍴1 teaspoon cumin
  • 🍴1/4 teaspoon paprika
  • 🍴1/4 cup vegetable broth
  • 🍴6 corn tortilla
  • 🍴2 tablespoon cabbage

Instructions

  • 🍴Start by heating 1 tablespoon of oil in a pan over low flame. Once the oil is hot, add the chopped onion, chopped yellow bell peppers, chopped jalapeno, and minced garlic to it. Cook for a couple of minutes and add rinsed and chopped jackfruit in it. Stir it continuously till it gets softened. Now, add cumin, coriander powder and smoked paprika to it. Cook it until the mixture turns aromatic.
  • 🍴Now, pour the orange juice, vegetable stock along with the adobo sauce in the pan and cook for some time. Keep stirring continuously and make sure the entire liquid evaporates. Transfer this mixture to a large bowl, and keep aside for a while. Now, place a non-stick pan over medium flame and heat 2 tablespoons of oil in it. Add half of the prepared jackfruit mixture in this pan and spread it evenly.
  • 🍴Let it cook for some time and make sure it turns light brown in color. Now, on a flat surface, place the tortillas and add a spoonful of this jack fruit mixture on each of these. Top it up with diced mangoes and chopped cabbage and serve with lime wedges to enjoy!
