Ingredients

  • 🍴1 cup jackfruit
  • 🍴4 tablespoon hung curd
  • 🍴1 tablespoon chopped ginger
  • 🍴1 tablespoon coriander leaves
  • 🍴1 tablespoon chopped curry leaves
  • 🍴1 teaspoon red chili powder
  • 🍴1 teaspoon cumin powder
  • 🍴1 tablespoon Kashmiri chili powder
  • 🍴1 tablespoon garlic paste
  • 🍴2 tablespoon gram flour (besan)
  • 🍴1 tablespoon ginger paste
  • 🍴1 tablespoon chopped, chopped garlic
  • 🍴1 tablespoon chopped green chilies
  • 🍴1 teaspoon turmeric powder
  • 🍴1 teaspoon kasoori methi powder
  • 🍴1 teaspoon garam masala powder
  • 🍴4 tablespoon cornflour
  • 🍴1 1/2 cup refined oil

Instructions

  • 🍴Cut the jackfruit into quarters lengthwise and remove the thick portion in the center and keep it in water to avoid the dull color.
  • 🍴Wash and put the jackfruit pieces into the pressure cooker along with turmeric and salt. Do not add more water in the cooker as it will make the jackfruit soggy, just level it up. Make sure that the jackfruits should not be overcooked. Cook on high flame for 2 whistles back to back.
  • 🍴Remove the cooker from the burner and keep it under the running water to cool down and the pressure dropdown.
  • 🍴Remove the lid when the pressure is released and drain the salty water. Wash the jackfruit pieces with chilled water and spread on a kitchen towel that can soak excess water.
  • 🍴Now, add all the spices along with gram flour (besan), cornflour, and hung curd in a large bowl and mix well. Transfer the cooked jackfruit pieces to this marination and stir to coat each and every piece well. Cover the bowl with a plate and keep it in a refrigerator for half an hour.
  • 🍴After half an hour, put a kadhai on medium flame and heat oil in it. Meanwhile, take out the bowl of jackfruit pieces and toss them again. When the oil is hot enough, add the marinated pieces in the hot oil and fry them till dark brown in color. Make sure you fry 4 or 5 pieces at a time. Once all the pieces are done, pierce toothpicks on each lollipop and cover the toothpicks with foil paper. Serve them hot with green chutney or tomato ketchup and enjoy!
