Ingredients

  • 🍴2 small sliced thick eggplant/ brinjal
  • 🍴16 slices white bread
  • 🍴1/2 cup veg mayonnaise
  • 🍴1 cup crushed lightly cheese- feta
  • 🍴1 tablespoon salted butter
  • 🍴2 small sliced & slit tomato
  • 🍴2 tablespoon refined oil
  • 🍴1/2 cup finely chopped spinach

Instructions

  • 🍴Toast the bread slices with 1 tablespoon of salted butter in a low heated pan and keep it aside. Apply a pinch of refined oil to the freshly cut eggplant slices and cook them in the pan on low heat till it is tender and soft.
