Ingredients
- 🍴2 medium eggplant/ brinjal
- 🍴6 cloves garlic
- 🍴2 red chili
- 🍴2 tablespoon light soya sauce
- 🍴2 tablespoon cooking wine
- 🍴salt as required
- 🍴4 tablespoon refined oil
- 🍴1-inch ginger
- 🍴4 spring onions
- 🍴2 teaspoon sugar
- 🍴1 teaspoon vinegar
Instructions
- 🍴Prepare the sauce
Add the soy sauce, granulated sugar, rice vinegar, cooking wine, and 1 tsp of sesame oil in a bowl and mix it well.
- 🍴Cook the eggplant
Add some oil to a pan and add the eggplant. Cook until golden brown on top and tender from inside and keep it aside. In the remaining oil, add the chilies and ginger with garlic and saute for a minute.
