- 🍴2 large eggplant/ brinjal
- 🍴salt as required
- 🍴2 cup mustard oil
- 🍴1 cup gram flour (besan)
- 🍴1/2 teaspoon turmeric

- 🍴To start with, cut the eggplants in a round shape. Do not chop off the eggplant from the middle. Instead, thinly slice the eggplants in round shape. Make sure that the pieces are not more than half an inch thick. Keep the eggplant places in a large bowl containing brine water and let it soak for half an hour.
- 🍴Next, prepare the batter for the fritter by mixing together the gram flour, turmeric powder and salt in a bowl. Add water and mix it thoroughly, so that no lumps remain. The batter should be of thick consistency.
- 🍴Now, strain the water out from the eggplant and let it dry for a few minutes. Heat the mustard oil in a kadhai and put it in high flame. Once the oil is heated properly, keep it in medium heat. Dip a piece of eggplant in the batter and fry it in the oil. A single batch will contain about 4-5 pieces while frying. Do remember to keep the flame on medium, so that the inside of the eggplant is cooked properly. Once done, serve it with ketchup.
