Ingredients
- 🍴1 cup all-purpose flour
- 🍴1 cup coconut
- 🍴1/2 teaspoon baking soda
- 🍴3/4 cup powdered brown sugar
- 🍴1/3 cup butter
- 🍴1 teaspoon vanilla essence
- 🍴1/2 cup oats
- 🍴1/2 teaspoon baking powder
- 🍴salt as required
- 🍴2 banana
- 🍴1/2 cup sunflower oil
- 🍴milk as required
Instructions
- 🍴Preheat oven to 180 degree Celsius and prepare a muffin pan with liner. Mash the bananas in a large mixing bowl with a back of a spoon.
- 🍴Add butter and oil in there. Mix with an electric mixer until all ingredients are blended properly. Then add sugar in the mixture and mix well again with an electric mixer.
- 🍴In another bowl, shift all-purpose flour and oats. Mix well, add coconut, salt, baking powder and baking soda. Mix well everything.
- 🍴Now add this flour mixture slowly in the butter-sugar mixture and beat the mixture well with an electric mixer. Do not over mix the batter, beat until you get a creamy batter.
- 🍴During beating, if you feel the batter is little dry, can add little milk, milk makes any cakes/cupcakes quite moist.
- 🍴Feel 2/3 of each muffin/cupcake pan with batter. Keep some space to raise. Sprinkle extra coconut flakes on top of each cupcake. You can sprinkle some nuts or dry fruits too.
- 🍴Put muffin/cupcake pan in the oven and bake for 25-30 minutes or a toothpick inserted in the middle of the cupcake, comes out clean. Remove from the oven and cool on the wire rack.
