- 🍴1 1/2 cup crystallized ginger
- 🍴1 teaspoon ginger powder

- 🍴2 cup wholemeal flour
- 🍴1 cup apple sauce
- 🍴2 teaspoon baking powder
- 🍴2 1/2 cup sugar
- 🍴3 cup all-purpose flour
- 🍴1 teaspoon baking soda
- 🍴1 teaspoon salt
Instructions
- 🍴Preheat the oven to 350 Celsius. Chop the crystallized ginger in a bowl. Add wholemeal flour and all-purpose flour in another bowl and mix evenly. Add baking soda, baking powder, ginger powder, and crystallized ginger. Mix properly with a fork.
- 🍴Make a deep hole in the center. Add vanilla extract, lemon rind, lemon juice, applesauce, vegetable oil, and 2 cup sugar. Whisk till the mixture turns moist. Cover the bowl and refrigerate for 1 hour.
- 🍴Now, take out the mixture from the refrigerator. Rub flour on your hands. Make 48 round balls out of the mixture and spread reserved sugar on a plate. Roll balls in sugar mixture to coat.
