Ingredients

  • 🍴245 gm cauliflower
  • 🍴1 small onion
  • 🍴1 teaspoon red chili powder
  • 🍴1 carrot
  • 🍴1 tablespoon coconut oil
  • 🍴2 sprigs curry leaves
  • 🍴1/2 cup frozen peas
  • 🍴1/2 cup coconut milk
  • 🍴1 1/2 teaspoon coriander powder
  • 🍴2 medium green chilli
  • 🍴1/2 piece ginger
  • 🍴1/2 teaspoon turmeric
  • 🍴1 teaspoon salt

Instructions

  • 🍴Chop vegetables and fry onions until soft

In a medium bowl, chop onion, ginger, and green chilli separately and keep it aside. Slice the cauliflower into florets and keep them aside. Heat coconut oil over medium flame in a pan and fry the onion until it turns golden brown and translucent.

  • 🍴Add chopped vegetables and spices to the pan and cook

Add the cauliflower florets, carrot, ginger, green chilly, water, one tsp salt, red chili, coriander, and turmeric powder to fried onions. Cover it with a lid and let it cook until the vegetables are tender and half-cooked.

  • 🍴Pour coconut milk into the pan and simmer

Pour coconut milk into it and simmer it for 5-7 minutes. Then mix in curry leaves and take them off the flame. Serve it hot.
