Ingredients

  • 🍴1/2 cup chopped capsicum ( green pepper)
  • 🍴1 pinch powdered turmeric
  • 🍴1/2 teaspoon lemon juice
  • 🍴2 finely chopped green chili
  • 🍴1 teaspoon roasted peanuts
  • 🍴2 tablespoon refined oil
  • 🍴1 1/2 cup grated mango
  • 🍴1/2 teaspoon minced ginger
  • 🍴2 leaves mint leaves
  • 🍴2 cup rice
  • 🍴salt as required

For Tempering

  • 🍴1/2 teaspoon mustard seeds
  • 🍴1/2 teaspoon urad dal

Instructions

  • 🍴To prepare this delicious dish, first, cook the rice in a pressure cooker and keep them aside.
  • 🍴Heat oil in a kadhai over medium flame and add mustard seeds and let them splutter. Then add the urad dal to it. Add the ginger, green chilies to it and saute for a minute.
  • 🍴Then, add the capsicum and grated mango along with the turmeric powder and salt. Cook for 3-4 minutes.
  • 🍴Next, add the cooked rice, roasted peanuts and mix well. Turn off the flame and transfer the rice to a serving bowl.
