Ingredients
- 🍴6 tortillas
- 🍴1 1/2 diced red onion
- 🍴1 1/2 cup frozen American corn kernels
- 🍴4 cloves minced garlic
- 🍴350 gm black beans
- 🍴2 tablespoon cumin
- 🍴salt as required
- 🍴2 teaspoon canola oil/ rapeseed oil
- 🍴1 1/2 red peppers
- 🍴1 1/2 diced jalapeno
- 🍴150 gm shredded cheese-pepper jack
- 🍴4 tablespoon Piri Piri seasoning
- 🍴1 1/2 teaspoon chili powder
Instructions
- 🍴To make these yummy Quesadillas, heat a large pan over medium flame and add oil to it. When the oil is hot enough, add onions, bell pepper, poblano pepper, corn, jalapeno, and garlic, and saute for about 5 minutes.
- 🍴Heat the black beans (use re-fried black beans, if available) in another pan and add the Piri Piri seasoning to flavour the beans.
- 🍴Once all the veggies are cooked, then add the cumin, chili powder, and salt to taste.
- 🍴The next step is to assemble the Quesadilla and get ready to cook it!
- 🍴First, take your tortilla and slather half of it with the refried black bean mixture (about 1/4 cup per tortilla). Top it with the veggies (1/4 of the veggie mixture), topping with the shredded cheese.
- 🍴Fold the Quesadilla in half and spray a large pan with the olive oil cooking spray, and let the dish cook until it's brown and crispy.
- 🍴Flip it to cook the other side and continue cooking until the cheese has melted and both sides are crisp.
