Ingredients

  • 🍴1 cup moong dal
  • 🍴4 tablespoon ghee
  • 🍴4 cup water
  • 🍴1 tablespoon sugar
  • 🍴1 teaspoon red chili
  • 🍴1 teaspoon cumin
  • 🍴1/2 cup peas
  • 🍴1 tablespoon minced ginger
  • 🍴1 teaspoon salt
  • 🍴1 teaspoon turmeric
  • 🍴1 teaspoon garam masala powder
  • 🍴1 cup rice

For Tempering

  • 🍴1 bay leaf
  • 🍴5 crushed green cardamom
  • 🍴5 clove
  • 🍴1 red chili
  • 🍴1 inch cinnamon stick

For Garnishing

  • 🍴1 coriander leaves

Instructions

  • 🍴Wash rice and dal

To begin with, in this recipe, soak and wash rice. Then take a pan and dry roast moong dal on medium-low flame until fragrant and wash under running cold water carefully. Soak dal for some time and then drain water.

  • 🍴Roast the spices in ghee

Heat ghee in a large heavy-bottomed pan until melted and add bay leaf, cloves, cinnamon stick, green cardamom, and whole red chilies.

  • 🍴Cook the masala

Once spices start spluttering, add ground spices except for garam masala and ginger into the pan and mix lightly with a dash of water for 10-15 seconds or until oil separates from the masala.

  • 🍴Add in the green peas and moong dal

If using fresh peas, add now and cook for 2-3 mins. Add moon dal and mix well; then add 2 cups of hot water with salt and a dash of sugar and bring it to a boil.

  • 🍴Add rice and cook the khichuri

Cover the pan with a lid and cook lentil until it’s half cooked. Once lentil is half done add rice with the rest of the water and cook until rice and lentil are done completely. Adjust seasoning as per your taste. It will take around 10-12 minutes to be done.
