Ingredients
- 🍴400 gm okra
- 🍴1/2 cup chopped into cubes onion
- 🍴1/2 teaspoon carom seeds
- 🍴2 teaspoon ginger
- 🍴1/2 cup chopped onion
- 🍴2 teaspoon coriander powder
- 🍴2 teaspoon powdered Kashmiri red chilli
- 🍴1 1/2 teaspoon salt
- 🍴1/2 teaspoon garam masala powder
- 🍴4 tablespoon vegetable oil
- 🍴1 teaspoon cumin seeds
- 🍴2 leaves bay leaf
- 🍴3 green chilli
- 🍴1/2 cup grated tomato
- 🍴1/2 teaspoon turmeric
- 🍴2 teaspoon cumin powder
- 🍴1/2 cup yoghurt (curd)
For Garnishing
- 🍴2 teaspoon coriander leaves
Instructions
- 🍴Wash okra, pat dry, cut and deep fry
First of all wash okra under running water twice. Once done, pat try the pieces on a cotton cloth. Now, cut the pieces into 4-inch pieces. Take a deep wok and add vegetable oil and fry the okra until it is 70 % cooked (turns partially tender). Once done, set them aside on a kitchen tissue.
- 🍴Fry onion cubes and set them aside
In the same wok, fry the onion cubes for 2-3 minutes and set them aside.
- 🍴Prepare the tempering and add okra
After removing the onion cubes, add cumin seeds, bay leaves, carom seeds, green chilli and ginger to oil. Saute the ingredients for 1 minute. Once done, add chopped onion and grated tomato to the tempering. Cook for 2-3 minutes. Now, add coriander powder, cumin powder, turmeric and Kashmiri red chilli powder to it. Mix all the ingredients well for 1 minute. Add fried okra to it and mix well. Cook for 2 minutes.
- 🍴Add yoghurt and onion cubes
Add salt and then add yoghurt along with onion cubes, that were fried earlier and kept aside. Mix all the ingredients and cook for 30 seconds.
- 🍴Add garam masala and serve
Add garam masala powder, stir well and switch off the flame. Serve hot in a serving Kadai or bowl and garnish with fresh coriander leaves and lemon slice. Enjoy it with roti or naan!
