Ingredients
- 🍴225 gm parboiled rice
- 🍴150 gm urad dal
- 🍴1/2 teaspoon fenugreek seeds
- 🍴refined oil as required
- 🍴2 tablespoon vinegar
- 🍴2 cup cold water
- 🍴75 gm basmati rice
- 🍴250 gm beetroot
- 🍴salt as required
- 🍴1/2 cup grated coconut
- 🍴2 1/2 cup water
Instructions
- 🍴To prepare this lip-smacking dosa recipe, wash beetroots in running water. Put a deep-bottomed pan on medium flame and add water in it along with some salt and vinegar. Stir and bring it to a boil and afterward, add the beetroots in it and let them boil for about 40 minutes.
- 🍴Once the beetroots are boiled, drain the extra water and switch off the burner. Put these boiled beetroots in iced water for 5-10 minutes. Drain the extra water, peel, and cut them into smaller pieces in a bowl. Transfer the chopped beetroots to a blender jar and blend to a fine puree.
- 🍴Next, in order to prepare a dosa batter, wash rice and urad dal in running water, and drain the extra water. Keep them soaked along with fenugreek seeds overnight. Once the dal and rice are soaked well, transfer to a blender jar and blend them to a fine paste. Add water (approximately 60 ml) and salt according to your taste, make a fine paste, and reserve for at least 5 hours.
- 🍴Add beetroot puree along with grated coconut in the batter, mix well and divide into 8 equal portions. Now, peel an onion, cut it into halve and tie one half in a muslin cloth and dip in refined oil. Rub the surface of a pre-heated griddle with the flat side of the onion. Warm the griddle over low heat, spread a portion of the batter over the surface by moving a ladle in concentric circles from the middle going outward (4" diameter, 1/4" thick).
- 🍴Cook for 2-3 minutes, flip over and cook for a minute. Ensure that the pancake does not become crisp. Serve hot.
