Ingredients
- π΄2 cup rice
- π΄1 teaspoon dry yeast
- π΄1/2 cup sugar
- π΄1 teaspoon salt
- π΄1 cup grated coconut
- π΄25 gm cashews
- π΄4 cup water
- π΄1 teaspoon green cardamom
- π΄25 gm raisins
- π΄1 tablespoon green cardamom
Instructions
- π΄Add coconut to soaked rice, and grind
To prepare this delicious recipe, wash the rice and soak it in water for 3-4 hours. Then drain the water and put the rice in a grinder. Add coconut to it and grind the mixture to form a fine paste. Transfer this paste into a bowl and add sugar and yeast to it. Mix it all together till it turns into a smooth batter and allows it to ferment overnight.

When the mixture is fermented, the volume of the batter should increase. Now, add salt and green cardamom powder to it and mix well. Leave the batter for another 30 minutes.

Meanwhile, take a rimmed steel dish and grease it with oil. Then, take a pressure cooker on medium flame and heat 2 cups of water in it. Now, take the appam cake batter and pour it into the dish using a ladle, filling it up 3/4 and leaving a little space for the batter to rise. Garnish the batter with cashews and raisins.

Next, take the dish and carefully place it inside the cooker. Cover the cooker with its lid, don't put any weight or a whistle on it. Then, turn the flame to high and let it cook. When steam starts to come out from the vent, cook for another 10 minutes and then turn off the flame. Let the pressure cooker cool down for about 5-7 minutes. Then, carefully take out the dish from the cooker and transfer the cake to a serving tray. Now, enjoy the delicious Appam Cakes.
