Ingredients

  • 🍴500 gm okra
  • 🍴1/2 teaspoon red chilli powder
  • 🍴1/2 teaspoon dry mango powder
  • 🍴salt as required
  • 🍴1 teaspoon lemon juice
  • 🍴1 teaspoon fennel seeds powder
  • 🍴1/2 teaspoon onion seeds
  • 🍴1 teaspoon ginger paste
  • 🍴1 teaspoon coriander powder
  • 🍴1/2 teaspoon garam masala powder
  • 🍴2 tomato
  • 🍴1 pinch asafoetida
  • 🍴1/2 teaspoon mustard seeds
  • 🍴3 tablespoon vegetable oil

For Garnishing

  • 🍴2 sprigs coriander leaves

Instructions

  • 🍴Wash okra (bhindi) properly with fresh water and pat dry them well using a tissue paper. Once dry, cut them lengthwise making two pieces from each bhindi.
  • 🍴Place these sliced bhindi in a medium-sized bowl and pour oil on top of it. Mix properly. Place this bowl in a microwave oven and set it on grill settings. Take out the bowl after 15 minutes and keep aside.
  • 🍴Now, take a separate bowl, add a little oil along with asafoetida, fennel seeds powder, mustard seeds and onion seeds. Mix properly and place the bowl in a microwave for 3 minutes. Take out this bowl and add this mixture with the previous bowl of okra and mix properly. Place it in the microwave for another 4 minutes and your achaari bhindi is now ready. Serve this with chapati or steamed rice and enjoy.
